ETHIOPIA ALO Sidama Bensa
About the Coffee
The Ethiopia Alo Sidama Bensa Natural coffee is a high-elevation specialty micro-lot produced by Tamiru Tadesse and his wife Messi at the Alo Main Station in the Bensa woreda of Sidama, Ethiopia. Grown at soaring altitudes between 1,920 and 2,280 meters, the whole coffee cherries undergo meticulous natural drying , unlocking a complex, intensely fruit-forward cup profile.
Traditional & Innovative Methods: While standard lots undergo a clean, sun-dried natural process on raised African beds, advanced iterations like the Mosto Anaerobic Natural involve sealing whole cherries with mosto (naturally collected coffee cherry leachate) to supercharge microbial activity and fruit expression. Extended fermentation variants (such as 72-hour to 102-hour anaerobic natural styles) yield heavy winey, berry, and tropical characteristics.
In the Cup
A vibrant, juicy balance featuring red currant, yellow peach, mango, pineapple, and subtle undertones of cacao or cane sugar sweetness.
